How To Grill The Perfect Steak

If you are a steak lover like me, it doesn’t get any better than a prime rib-eye steak cooked on outdoor grill.

What makes a good steak?

It all starts with steak meat that has a ribbon of fat on the outer edge along with some internal marbling means a tender and juicy steak. The one thing about a great piece of meat is that it will not require any exotic seasoning all that is really needed to properly season a steak is coarsely grain salt and fresh ground pepper. Examples of coarsely grain salt are kosher salt, or Course Sea Salt. The reason for the minimal use of seasonings is that when comes to flavor you cannot beat a great steak and makes no sense to mask that flavor with a sugary sauce or a store bought splice blend. There are a few things that can be done to improve flavor, one is compound butter.

How to make compound butter

Allow 1 stick of unsalted butter and ½ cup of crumbled blue cheese to come to room temperature and mix and then refrigerate for approximately 2 hours.

Before you start grilling

• Brush some virgin olive oil to each side of the steak. This will allow the salt and pepper to adhere to the meat and it also provides for better contact between the steak and the grill. Better contact equals better grill marks

• Liberally season both sides of the meat with the coarse salt and freshly ground pepper.

It is time to start grilling

Place your steak on the hottest part of the grill. A good rule of thumb in grilling a steak is it takes around 10 minutes of cooking time for every 1 inch of thickness to achieve a medium degree of done. 8 minutes will yield a medium rare steak. Rotate the steak 90° at 2 minutes to get those perfect grill marks and Flip your steak at ½ the cooking time and finally after 2 minutes rotate again for grill marks on both sides. If you don’t have a meat thermometer you can approximate medium rare by touching the top and if it similar to the tip of your nose it should be done.

Finishing the Steak

To complete the process of grilling a steak place some of the compound butter on the surface of the steak and let melt. Now dinner can be served, the compound butter remaining can be used on baked potatoes, vegetables or spread it bread.
